I'm interested in graphic design, but every school is incredibly competitive in this major! Only hundreds of thousands are accepted, and I really want to be one of them! Does anyone have suggestions on how to put together a good portfolio, or any strategies on how to get accepted into this major? Transferring in after freshman year also isn't an option at most schools so I need to be prepared before next fall!

If it's possible and there's an art school anywhere near you, see if you can take a summer class or two or three at the art school: one in graphic design, one in any type of life drawing, and if a third, a third in whatever you'd like. This will help improve your skills, and give you the types of pieces that most art schools want to see in a portfolio. In fact, some schools have summer courses just for high school students who are working on portfolios. If taking classes isn't possible, see if you can't, at a minumum, get some drawing from life, or painting from life, into your portfolio. That could be figurative, portraits, landscapes, still lifes - but not from your imagination, and absolutely not drawn from a photo.
Check the websites for the art programs you think you're interested in, and see what they want in terms of portfolio pieces. A lot of them list flat out what they require, and that's certainly helpful.
Also see if you can get to a portfolio day. I'll link, below. These days are really cool. They're like open houses, where a lot of art schools come to one place. If you bring your portfolio, they'll look at it and tell you what you need to do to improve it. You can also pick up info on the schools.
